Ciabatta with Goat Cheese, Arugula, Peppers, Zucchini

Ingredients 

1 ciabatta (homemade or bought)

1 zucchini

1 red or yellow pointed pepper

1 handfull  arugula

Goat cheese (for spreading)

3 Tbsp. olive oil

Balsamic vinegar

Salt and pepper to taste

Serves 2

  • Wash the vegetables. Cut the pepper lengthwise in 4 strips, cut the zucchini lengthwise as well into 1/4 inch thick strips. Sprinkle the vegetables with olive oil and salt and pepper to taste
  • Preheat a grilling pan and add one spoonful of olive oil. Put the peppers and zuchinni in the pan and cover with aluminum foil. Grill the peppers and zuchinni until brown on both sides.
  • Meanwhile cut the ciabatta in half and then one more time lengthwise. Toast the ciabatta and spread a generous amount of goat cheese on it. Cover it with arugula and sprinkle with olive oil and balsamic vinegar.
  • When the peppers and zucchini are ready, put them on top of the arugula and the ciabattas are ready to serve.
