(Serves 4, makes 21 pancakes)
2 cups of flour*
2 1/4 cups of milk
1/2 tsp vanilla extract or vanilla sugar
2 tbsp powdered sugar
Oil (coconut or vegetable oil)
*Flour can be substituted with whole wheat or gluten free rice flour at your discretion.
- In a large bowl mix flower with milk, add the egg and vanilla sugar; mix until smooth. Peel the apples, cut them in little pieces/chunks, mix into the batter.
- Heat oil of your choice in a frying pan over medium-high heat, ladle the batter on to the pan, ¼ cup for each pancake.
- Fry until golden brown on both sides.
- Sprinkle with powdered sugar, serve warm.
