Chicken and Zucchini Kefta

 

One of my my favorite recipes of the past few months. It’s from a book I mentioned in one of my previous posts “The Clean Plate” by Gwyneth Paltrow. I love all the recipes in the book, they are healthy, clean very easy and extremely delicious. This one is loved by the whole family. Enjoy!

Ingredients

(serves 4)

Chicken skewers:

1 Zucchini

1 pound ( 450g – 500g) ground chicken

2 scallions, thinly sliced

2 Tbsp fresh cilantro, chopped

2 Tbsp fresh ginger, finely chopped

1 tsp ground cumin

1 tsp ground coriander

1/2 tsp ground cinnamon

1 1/2 tsp salt

2 Tbsp tahini

Olive oil

12 wooden skewers

Dressing:

1/4 cup tahini

1/4 cup of water

2 garlic cloves, grated

Juice from 1/2 of a lemon

1 Tbsp apple cider vinegar

2 small shallots minced

1/4 tsp salt

For serving:

Rice or Butter lettuce or both

 

  • Grate the zucchini and add 1/2 tsp salt. Let it sit for 10 min. then squeeze out the excess liquid. Mix the zucchini and all the other ingredients for the skewers in a large bowl. With damp hands form the meat around the wooden skewers.
  • Heat the grill or grilling pan to medium-high heat, then brush the meat with olive oil and put them in the pan — Cook for 8-10 min on each side.
  • In the meantime, you can prepare the dressing. Put the tahini in a bowl and whisk it until it becomes loose. Continue to whisk it while slowly pouring in the water. It takes a few seconds until it becomes smooth; when that happens, you can add the rest of the ingredients and whisk them together.
  • When the meat skewers are done, place them on top of the lettuce and drizzle with the tahini dressing.
